You’ll learn Tuscan and Italian traditional recipes, discover and select the right ingredients walking around the market and you’ll cook like a real Italian mamma: a unique opportunity to treasure tasty recipes that you can have fun to replicate at home for your loved ones and your friends.
Every Tuscan cooking class of our course is focused on a complete menu, which consists of an entrée, a first course, a second course and a dessert. You will find out how to make fresh pasta and roll it out with a rolling pin. You will learn how to prepare our famous tortelli di patate (fresh ravioli filled with local potatoes) and other fantastic comfort food recipes.
Here in Casentino, your cooking vacations in Tuscany will be a real cultural experience for all of your senses. The typical recipes of our valley, indeed, sink their roots deep into medieval history and belong to the heritage of traditions that still today we preserve with love and dedication.
THE COURSE
Our Tuscan cooking vacation program lasts two weeks and consists of 4 three-hour afternoon classes. The course is intended for a minimum of 3 and a maximum of 7 people and is held in Italian. On request and previous quote acceptance, the school can arrange a simultaneous translation service in English.
A first-hand experience of the real Italian and Tuscan cuisine
A two-week course to discover the basics and the secrets of Tuscan and Italian cuisine. A funny and stimulating experience to learn some of our most famous recipes:
- tortelli di patate (fresh ravioli filled with local potatoes);
- sugo di nana (free range farm duck meat sauce);
- zuppa di cipolle (onion soup);
- Scottiglia (an all-in-one course comprising various types of meat cooked very slowly and served with Tuscan bread);
- maccheroni (hand made tagliatelle);
- fagioli all’uccelletto (beans cooked slowly with Tuscan pork sausages);
- ribollita casentinese (mixed vegetable soup and bread).
Every lesson of our Tuscan cooking vacation program begins in the afternoon, around 4 PM, and lasts three hours, or until everything is ready to sit together at the table and taste what we’ve cooked.
Guided by our chef, you’ll learn to cook every recipe, because any of our Tuscan cooking class is not a moment of simple observation, it is the opportunity of experiencing Tuscan cuisine first-hand, of trying recipes that are very distant from your gastronomic traditions while having fun.

At the end of every Tuscan cooking class, there comes the moment to dine together and it’s now that Italian language and culture learning merge with the most important peculiarity of Italian food and wine tradition: conviviality. Eating, for us Italians, is not only feeding; it’s a moment of sharing, of listening and fun like no others. That’s why your cooking vacations in Tuscany will become a perfect mix of cooking lessons, tastings, cultural discoveries and lots of laughs.

The activities of our Tuscan cookery vacation program last two weeks and are available from March to October with no class suspension during holidays. The course requires a minimum of 3 students.

In the morning you can focus on learning Italian with one of our Italian language courses, both in small groups or privately. Attending a Tuscan cooking class, indeed, is a good way to improve your speaking skills, while morning lessons are fundamental for grammar and lexical knowledge.
During your study trip you have the opportunity to choose from one of our cultural courses too (cooking course, stone carving course, painting course): real immersion experiences that last two weeks.
On the day of your arrival at the school, we’ll arrange your schedule giving you the possibility of easily attending both the morning language courses and the afternoon cultural programs.
